Originally based on a remedy to cure Spanish flu, the national drink of Brazil is made with cachaca (spirit from a sugar cane) or white rum/vodka, brown sugar and lime juice. As with many cocktails – the history and origin of the Caipirinha is a little muddled to say the least! Some say Paratay – São Paulo – Brazil, and other Alentejo – Portugal. The Original Caipirinha Recipe Ingredients 2 limes , chopped into wedges, plus extra lime wedges to serve (optional) 5 tbsp golden caster sugar 200ml cachaça ice Recipe 1. Put the lime wedges in a large jug with the sugar, then use a muddler or the end of a rolling pin to break them down. Release as much juice from the wedges as possible, and let it mix with the sugar to create a syrup – you can also do this with a large pestle and mortar. Discard the lime peel. 2. Divide the syrup and cachaça between four glasses, then top with the crushed ice. Serve garnished with lime wedges, if you like.
